A delightful and satisfying Low Carb Pizza Casserole packed with the flavors of sausage, cheese, and fresh vegetables.
Ingredients

- 1 lb Ground Sausage
- 2 cups Mozzarella Cheese, shredded
- 1 cup Bell Peppers, chopped
- 1 cup Mushrooms, sliced
- 1 cup Tomato Sauce
- 1 tsp Fresh Basil, chopped (or 1/3 tsp dried)
- 1 tsp Oregano
- 2 cloves Garlic, minced
- 3 Eggs, beaten
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground sausage in a skillet over medium heat until fully cooked. Drain excess grease.
- Sauté chopped bell peppers and mushrooms in the same skillet until just tender, about 5-7 minutes.
- Combine the cooked sausage, sautéed vegetables, tomato sauce, and half of the cheese in a large mixing bowl. Mix well.
- Stir in beaten eggs to bind the mixture.
- Transfer the mixture to a greased casserole dish. Spread it evenly and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
- Allow it to cool slightly before slicing for clean edges.
Notes
For an extra kick, sprinkle red pepper flakes on top before serving. Store leftovers in an airtight container for 3-4 days or freeze for later.
