Description

A delightful and satisfying Low Carb Pizza Casserole packed with the flavors of sausage, cheese, and fresh vegetables.


Ingredients

  • 1 lb Ground Sausage
  • 2 cups Mozzarella Cheese, shredded
  • 1 cup Bell Peppers, chopped
  • 1 cup Mushrooms, sliced
  • 1 cup Tomato Sauce
  • 1 tsp Fresh Basil, chopped (or 1/3 tsp dried)
  • 1 tsp Oregano
  • 2 cloves Garlic, minced
  • 3 Eggs, beaten

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground sausage in a skillet over medium heat until fully cooked. Drain excess grease.
  3. Sauté chopped bell peppers and mushrooms in the same skillet until just tender, about 5-7 minutes.
  4. Combine the cooked sausage, sautéed vegetables, tomato sauce, and half of the cheese in a large mixing bowl. Mix well.
  5. Stir in beaten eggs to bind the mixture.
  6. Transfer the mixture to a greased casserole dish. Spread it evenly and top with the remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  8. Allow it to cool slightly before slicing for clean edges.

Notes

For an extra kick, sprinkle red pepper flakes on top before serving. Store leftovers in an airtight container for 3-4 days or freeze for later.
