- 8 oz fresh or cooked lobster meat
- 4 oz sharp cheddar cheese, shredded
- 4 oz creamy fontina cheese, shredded
- 4 slices of sourdough or thick-cut white bread
- 4 tbsp unsalted butter, softened
- Fresh herbs (chives or parsley), chopped
Instructions
- If using fresh lobster, boil it in salted water for 8-10 minutes until opaque, then cool and chop.
- In a bowl, mix chopped lobster with salt, pepper, cheese, and fresh herbs.
- Spread softened butter on one side of each bread slice.
- On unbuttered side, layer lobster filling and top with extra cheese.
- Heat a skillet over medium-low; cook sandwich until golden, 4-5 minutes. Flip and repeat.
- Let sit for a minute before slicing. Serve warm.
Notes
For a vegetarian option, substitute sautéed mushrooms or roasted red peppers for the lobster.
