Description

A decadent blend of sweet lobster and gooey cheeses, grilled to golden perfection for a gourmet twist on a classic comfort food.


Ingredients

  • 8 oz fresh or cooked lobster meat
  • 4 oz sharp cheddar cheese, shredded
  • 4 oz creamy fontina cheese, shredded
  • 4 slices of sourdough or thick-cut white bread
  • 4 tbsp unsalted butter, softened
  • Fresh herbs (chives or parsley), chopped

Instructions

  1. If using fresh lobster, boil it in salted water for 8-10 minutes until opaque, then cool and chop.
  2. In a bowl, mix chopped lobster with salt, pepper, cheese, and fresh herbs.
  3. Spread softened butter on one side of each bread slice.
  4. On unbuttered side, layer lobster filling and top with extra cheese.
  5. Heat a skillet over medium-low; cook sandwich until golden, 4-5 minutes. Flip and repeat.
  6. Let sit for a minute before slicing. Serve warm.

Notes

For a vegetarian option, substitute sautéed mushrooms or roasted red peppers for the lobster.
