- 4 large Russet potatoes, cubed
- 1 cup sharp cheddar cheese, shredded
- 2 cups whole milk or heavy cream
- 4 cups low-sodium chicken or vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 slices bacon, cooked and crumbled (optional)
- 2 green onions, chopped
- Salt and pepper to taste
- Fresh thyme or parsley for garnish (optional)
Instructions
- In a large pot over medium heat, add a drizzle of olive oil and sauté chopped onions and minced garlic until translucent, about 5 minutes.
- Add cubed potatoes and pour in enough broth to cover. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
- Blend or mash the potatoes for desired texture.
- Stir in milk or cream and shredded cheddar until melted and creamy. Season with salt and pepper to taste.
- Before serving, add crispy bacon bits and garnish with green onions.
- Ladle into bowls and enjoy hot, with extra cheese if desired.
Notes
For a vegetarian option, omit bacon and use vegetable broth. Add legumes or seasonal vegetables for extra nutrition.
