  • 3 cloves garlic, minced
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil and sauté chopped onions and minced garlic until translucent, about 5 minutes.
  2. Add cubed potatoes and pour in enough broth to cover. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
