- 1 lb boneless, skinless chicken breasts, chopped
- 2 cups fresh broccoli florets
- 8 oz rotini or penne pasta
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 cup heavy cream
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup Parmesan cheese, grated
- Salt and pepper to taste
- Italian herbs (basil, oregano) to taste
- Crushed red pepper flakes (optional)
Instructions
- Prep the Ingredients: Chop the chicken and break the broccoli into florets.
- Cook the Pasta: Boil water with salt, add pasta, and cook until al dente. Drain and reserve some pasta water.
- Sauté the Chicken: Melt butter, add garlic, and cook until fragrant. Add chicken, season, and cook until golden.
- Add the Broccoli: Sauté broccoli until tender, about 3-4 minutes.
- Create the Sauce: Pour in cream, simmer, and whisk in cheeses until melted.
- Combine Everything: Toss pasta with the chicken, broccoli, and sauce until coated.
- Serve: Garnish with herbs or extra cheese, and enjoy!
Notes
For lighter options, substitute Greek yogurt for cream and use shrimp or tofu instead of chicken. Serve with garlic bread or a mixed greens salad.
