Ingredients
Scale
- 4 cups fresh broccoli florets
- 2 cups sharp cheddar cheese, shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- 1 cup carrots, diced
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
- Optional spices: nutmeg or cayenne pepper
Instructions
- Chop the broccoli into florets and dice the onion, garlic, and carrots.
- Melt butter (or heat olive oil) in a large pot over medium heat; sauté onion and garlic for 2-3 minutes until fragrant.
- Add diced carrots and sauté for about 5 minutes until softened.
- Introduce the broccoli florets and stir to combine; let cook for a few minutes.
- Pour in the broth, bring to a simmer, and let bubble for 15 minutes until broccoli is tender.
- Using an immersion blender, blend the soup partially for a creamy consistency, leaving some chunks for texture.
- Lower the heat and stir in the heavy cream or milk and the shredded cheddar until completely melted.
- Season to taste with salt and pepper, and garnish with bacon, green onions, or extra cheese before serving.
Notes
Adjust spices and cheese types to your preference; can substitute heavy cream with oat milk for a lighter option.
