Instructions
- Dice onions and garlic, chop broccoli into small florets.
- Melt butter in a large pot over medium heat. Sauté onions and garlic until soft and fragrant, about 5 minutes.
- Add vegetable or chicken broth and bring to a simmer. Gently add broccoli and cook for 10-12 minutes until tender but vibrant.
- Blend the soup for a smoother texture if desired, leaving some chunks for texture.
- Reduce heat and stir in cream or milk followed by cheese until melted and creamy. Season with salt, pepper, and nutmeg.
- Serve immediately, garnished with extra cheese or croutons.
Notes
For variations, substitute broccoli with cauliflower or use different types of cheese. Consider blending half of the soup for a creamy texture.
