Description
A comforting bowl of Loaded Baked Potato Soup, rich in flavor with creamy potatoes, crispy bacon, and topped with cheddar and chives.
Ingredients
Scale
- 4 medium Russet potatoes, diced
- 4 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 4 slices crispy bacon, chopped
- 1/4 cup sour cream
- Fresh chives or green onions, for garnish
Instructions
- Wash and dice the potatoes into uniform pieces. Chop the onion and mince the garlic.
- In a large pot, melt butter over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in garlic and sauté for another minute.
- Add diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let simmer until potatoes are fork-tender, about 15-20 minutes.
- Use an immersion blender to puree the soup to your desired consistency, blending only half for a chunkier texture if preferred.
- Stir in heavy cream and shredded cheddar cheese until melted. Adjust seasonings with salt and pepper.
- Ladle soup into bowls and top with crispy bacon, a dollop of sour cream, and a sprinkle of fresh chives.
- Savor the comforting warmth of every spoonful and enjoy!
Notes
Select starchy potatoes for the best texture and flavor. Experiment with different toppings for a unique spin on the dish.
