- 4 baked russet potatoes
- 8 oz cream cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup crispy bacon bits
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- If using leftover baked potatoes, cut them in half and scoop out the insides. If using fresh potatoes, bake until soft.
- In a mixing bowl, combine potato flesh, cream cheese, sour cream, half of the cheddar cheese, and spices. Mix until creamy.
- Fold in bacon pieces and half of the green onions, reserving some for topping.
- Transfer the mixture to an oven-safe dish and spread evenly. Top with the remaining cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Sprinkle remaining green onions on top before serving.
Notes
For a vegetarian twist, omit the bacon and use smoked paprika for flavor.
