Description

A comforting and creamy dip packed with the flavors of baked potatoes, crispy bacon, and sharp cheddar cheese, perfect for gatherings.


Ingredients

  • 4 baked russet potatoes
  • 8 oz cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using leftover baked potatoes, cut them in half and scoop out the insides. If using fresh potatoes, bake until soft.
  3. In a mixing bowl, combine potato flesh, cream cheese, sour cream, half of the cheddar cheese, and spices. Mix until creamy.
  4. Fold in bacon pieces and half of the green onions, reserving some for topping.
  5. Transfer the mixture to an oven-safe dish and spread evenly. Top with the remaining cheddar cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Sprinkle remaining green onions on top before serving.

Notes

For a vegetarian twist, omit the bacon and use smoked paprika for flavor.
