- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- Grated Parmesan cheese (or nutritional yeast for a vegan option)
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until golden.
- Add the Broccoli: Toss in broccoli and a splash of reserved pasta water, sautéing for about 5-7 minutes until tender-crisp.
- Combine Everything: Add drained pasta to the skillet, drizzle with olive oil and lemon juice, and toss to combine. Adjust with more reserved pasta water if needed.
- Season and Serve: Season with salt and pepper, sprinkle with Parmesan cheese, toss again, and serve immediately.
Notes
For a twist, add grilled chicken or shrimp. Garnish with parsley for a fresh touch.
