  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries (or frozen, drained)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, granulated sugar, and brown sugar together in a bowl until light and fluffy.
  3. Add the egg, lemon zest, and lemon juice, and beat until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture until just combined.
  6. Fold in the raspberries gently.
  7. Scoop tablespoons of dough onto a lined baking sheet, spacing them a few inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For added crunch, sprinkle coarse sugar on top of the cookies before baking. Always use fresh lemon zest for the best flavor.
