A comforting fusion dish that combines udon noodles with a rich kimchi butter sauce and topped with a perfectly soft-boiled egg.
Ingredients
- Udon noodles
- Kimchi
- Unsalted butter
- Garlic, minced
- Ginger, grated
- Green onions, chopped
- Eggs
- Sesame seeds (optional)
Instructions
- Cook udon noodles according to package instructions. Drain and toss with a bit of oil.
- In a large skillet, melt butter over medium heat. Sauté minced garlic and grated ginger until fragrant (about 1 minute).
- Stir in chopped kimchi and let it simmer to meld flavors.
- Combine the udon noodles with the kimchi butter sauce until fully coated.
- Soft-boil the eggs by cooking them in boiling water for 6-7 minutes, then plunging them into an ice bath.
- Serve the udon in bowls, halving the soft-boiled eggs and placing on top. Garnish with chopped green onions and sesame seeds.

Notes
For a gluten-free version, substitute udon noodles with rice noodles. Experiment with the amount of kimchi based on its spiciness.
