Ingredients

  • Udon noodles
  • Kimchi
  • Unsalted butter
  • Garlic, minced
  • Ginger, grated
  • Green onions, chopped
  • Eggs
  • Sesame seeds (optional)

Instructions

  1. Cook udon noodles according to package instructions. Drain and toss with a bit of oil.
  2. In a large skillet, melt butter over medium heat. Sauté minced garlic and grated ginger until fragrant (about 1 minute).
  3. Stir in chopped kimchi and let it simmer to meld flavors.
  4. Combine the udon noodles with the kimchi butter sauce until fully coated.
  5. Soft-boil the eggs by cooking them in boiling water for 6-7 minutes, then plunging them into an ice bath.
  6. Serve the udon in bowls, halving the soft-boiled eggs and placing on top. Garnish with chopped green onions and sesame seeds.
  7. Enjoy each mouthful!

Notes

For a gluten-free version, substitute udon noodles with rice noodles. Experiment with the amount of kimchi based on its spiciness.
