Description
A comforting dish of udon noodles tossed in rich kimchi butter and topped with a soft-boiled egg, delivering a burst of flavors.

- 200g udon noodles
- 100g kimchi
- 2 tablespoons unsalted butter
- 2 eggs
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt, to taste
- Pinch of sugar, optional
- Chili flakes, optional
Instructions
- Bring a pot of water to boiling. Add the udon noodles and cook according to package instructions until tender yet firm, about 3 to 5 minutes. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn it.
- Add the kimchi to the skillet and sauté until warm and juices are released, about 1 to 2 minutes.
- Return the udon noodles to the skillet and toss gently with the kimchi and garlic butter. Add a few tablespoons of reserved noodle cooking water if needed.
- Prepare the soft-boiled eggs by gently lowering them into boiling water for 6 to 7 minutes. Transfer to an ice bath, cool, peel and set aside.
- Serve the kimchi udon in bowls, top with halved soft-boiled eggs, sprinkle with chopped green onions, and drizzle with sesame oil if desired.

Notes
Feel free to adjust spice levels by adding more or less kimchi. Consider adding vegetables for a more nutritious dish.
