- 1 cup graham crackers, crushed
- 3 tablespoons butter, melted
- 2 tablespoons sugar
- 1/2 cup fresh key lime juice
- 1/2 cup sugar
- 1 tablespoon gelatin
- 1 cup heavy cream
- Zest of 2 key limes
Instructions
- Prepare the Graham Cracker Crust: Crush graham crackers and mix with melted butter and sugar. Press into cups and bake at 350°F (175°C) for 5–7 minutes. Let cool.
- Make the Mousse: Combine key lime juice and sugar in a bowl, sprinkle gelatin and let bloom for 5 minutes. Warm until gelatin dissolves.
- Whip the Cream: Whip heavy cream until soft peaks form. Fold in cooled gelatin mixture gently.
- Combine: Add lime zest to the mousse and mix well. Spoon into prepared crusts.
- Chill: Refrigerate for 2-3 hours to set.
- Garnish and Serve: Top with whipped cream and a slice of lime or lime zest if desired.
