Instructions

  2. Make the Mousse: Combine key lime juice and sugar in a bowl, sprinkle gelatin and let bloom for 5 minutes. Warm until gelatin dissolves.
  3. Whip the Cream: Whip heavy cream until soft peaks form. Fold in cooled gelatin mixture gently.
  4. Combine: Add lime zest to the mousse and mix well. Spoon into prepared crusts.
  5. Chill: Refrigerate for 2-3 hours to set.
  6. Garnish and Serve: Top with whipped cream and a slice of lime or lime zest if desired.
