Ingredients

  • 2 tablespoons coconut flour
  • 2 eggs
  • 1 cup sparkling water
  • Pinch of salt
  • Black pepper to taste
  • Optional: garlic powder and paprika
  • Oil for frying (avocado oil recommended)

Instructions

  1. In a mixing bowl, combine almond flour and coconut flour.
  2. Add salt, pepper, and any additional spices you prefer.
  3. In a separate bowl, whisk eggs until fluffy.
  4. Gradually mix the eggs into the flour mixture.
  5. Slowly pour in sparkling water, stirring until smooth.
  6. Heat oil in a skillet until shimmering.
  7. Dip vegetables or proteins in the batter and fry in hot oil, avoiding overcrowding.
  8. Cook until golden brown, about 2-3 minutes on each side.
  9. Remove and drain on paper towels.
