- 1 lb Skirt Steak
- 3 tbsp Olive Oil
- 3 cloves Garlic, minced
- ¼ cup Fresh Parsley, chopped
- ¼ cup Fresh Mint, chopped
- Juice and Zest of 1 Lemon
- 1 cup Couscous
- 2 cups Vegetable or Chicken Broth
- Salt and Pepper to taste
Instructions
- Marinate the Skirt Steak: In a bowl, whisk together olive oil, minced garlic, chopped herbs, salt, and pepper. Coat the steak with the marinade and let it rest for at least 30 minutes (or overnight for deeper flavor).
- Prepare the Couscous: In a pot, bring vegetable or chicken broth to a boil. Add couscous, reduce heat, cover, and simmer for about 10 minutes or until the liquid is absorbed. Fluff with a fork and stir in lemon juice, zest, and chopped herbs.
- Grill the Steak: Preheat your grill to high heat. Grill the steak for about 3-4 minutes per side, depending on your desired doneness (medium rare is ideal). Remove from the grill and let it rest for five minutes before slicing against the grain.
- Serve: Place a serving of couscous on each plate, top it with grilled skirt steak, and drizzle with a bit more olive oil and a sprinkle of fresh herbs.
