  • 1 box Jiffy Corn Muffin Mix
  • 1 can sweet corn (drained)
  • 1 can creamed corn
  • 1 cup sour cream
  • 1/2 cup butter (melted)
  • 2 eggs
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together Jiffy Corn Muffin Mix, canned corn, creamed corn, sour cream, melted butter, eggs, and cheese if using.
  3. Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly.
  4. Bake for 45-50 minutes, until golden brown and a toothpick comes out clean.
  5. Allow to cool for a few minutes before serving.

Notes

For added crunch, sprinkle breadcrumbs on top before baking. Experiment with herbs or other vegetables for extra flavor.
