- 1 box Jiffy Corn Muffin Mix
- 1 can sweet corn (drained)
- 1 can creamed corn
- 1 cup sour cream
- 1/2 cup butter (melted)
- 2 eggs
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together Jiffy Corn Muffin Mix, canned corn, creamed corn, sour cream, melted butter, eggs, and cheese if using.
- Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly.
- Bake for 45-50 minutes, until golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before serving.
Notes
For added crunch, sprinkle breadcrumbs on top before baking. Experiment with herbs or other vegetables for extra flavor.
