- 1 cup all-purpose flour
- 2 cups milk
- Pinch of salt
- 2 cups ripe jasmine melon, pureed
- 2 cups heavy cream
- Sugar (to taste)
- Jasmine petals (for garnish)
Instructions
- In a mixing bowl, whisk together flour, milk, and salt until smooth. Let the batter rest for 30 minutes.
- In a non-stick skillet over medium heat, ladle a small amount of batter, swirling the pan to coat evenly, and cook until golden, about 1-2 minutes per side. Repeat until around 20 crepes are made.
- Blend the jasmine melon into a smooth puree. Whip the heavy cream until soft peaks form. Fold in the melon puree and sugar, tasting as you go, and add jasmine petals carefully.
- On a flat plate, place one crepe and add a generous layer of the jasmine melon cream. Top with another crepe and repeat the layering until all crepes and cream are used, finishing with a crepe on top.
- Refrigerate for at least two hours before slicing and garnish with sprigs of fresh jasmine before serving.
