Ingredients

  • Ramen Noodles (fresh or dried)
  • Broth (chicken or vegetable base)
  • Curry Powder (Japanese brands like S&B or Golden Curry)
  • Protein (chicken, beef, or tofu)
  • Vegetables (carrots, shiitake mushrooms, and bok choy)
  • Aromatics (fresh garlic and ginger)
  • Garnishes (scallions, sesame seeds, or fried garlic)

Instructions

  1. In a large pot, heat a little oil over medium heat. Sauté finely chopped garlic and ginger until fragrant. Add your broth and bring it to a gentle simmer.
  2. If using chicken, slice it into bite-sized pieces and add it to the broth, letting it cook through. For vegetarian versions, add cubed tofu and heat until golden.
  3. Toss in the chopped carrots and mushrooms. Sprinkle in your curry powder and mix well. Simmer for about 10 minutes.
  4. In a separate pot, cook your ramen noodles according to package instructions. Drain and set aside.
  5. Once the vegetables are cooked and tender, check the seasoning of your broth. Adjust with soy sauce or salt to taste, and mix in a splash of coconut milk if desired.
  6. In a serving bowl, layer the noodles at the bottom. Ladle the hot broth and veggies generously on top.
  7. Finish with fresh herbs, sesame seeds, or chili flakes if desired.
