- 1 cup pumpkin puree
- 1/2 cup unsalted butter, cold
- 2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
Instructions
- Prepare the Dough: In a large mixing bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add a bit of cold water until the dough holds together. Cover and chill for at least 30 minutes.
- Make the Filling: In a separate bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, and a pinch of salt. Taste and adjust the sweetness or spices based on your preference.
- Roll Out the Dough: Once chilled, divide it into two halves. Roll out on a floured surface until about 1/8-inch thick.
- Shape the Pies: Cut the rolled dough into 4-5 inch circles. Place a spoonful of pumpkin filling in the center and wet the edges with water. Fold the dough over to create a pocket and firmly seal the edges with a fork.
- Create Decorative Faces: Use a sharp knife to carve playful jack-o-lantern faces on top of the pies.
- Bake: Preheat your oven to 375°F (190°C). Place your pies on a baking sheet and brush with the beaten egg. Bake for about 25-30 minutes until golden brown.
- Cool and Enjoy: Let them cool slightly before indulging.
