- 1 pound Italian sausage (sweet or spicy)
- 4 medium potatoes (russet or Yukon gold), sliced
- 1 medium onion, diced
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 tablespoon fresh or dried rosemary
- 1 tablespoon fresh or dried thyme
- Salt and pepper to taste
- Optional: spinach or zucchini
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the Italian sausage over medium heat, breaking it into pieces. Transfer to a plate and drain excess fat.
- In the same skillet, sauté the diced onions and bell peppers until soft. Add the minced garlic and sauté for an additional minute.
- In a large bowl, combine the sliced potatoes, sautéed vegetables, cooked sausage, rosemary, thyme, salt, and pepper.
- Stir in a generous handful of mozzarella cheese.
- Transfer the mixture to a greased casserole dish, spreading it evenly, and top with remaining cheese.
- Cover with foil and bake for about 30 minutes. Remove foil and bake for another 20 minutes until the potatoes are tender and cheese is golden.
- Let rest for 10 minutes before serving.
Notes
For an even creamier texture, consider pre-cooking the potatoes for 5 minutes before mixing. Ensure uniform cutting of potatoes for even cooking.
