  • 1 pound Italian sausage (sweet or spicy)
  • 4 medium potatoes (russet or Yukon gold), sliced
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh or dried rosemary
  • 1 tablespoon fresh or dried thyme
  • Salt and pepper to taste
  • Optional: spinach or zucchini

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the Italian sausage over medium heat, breaking it into pieces. Transfer to a plate and drain excess fat.
  3. In the same skillet, sauté the diced onions and bell peppers until soft. Add the minced garlic and sauté for an additional minute.
  4. In a large bowl, combine the sliced potatoes, sautéed vegetables, cooked sausage, rosemary, thyme, salt, and pepper.
  5. Stir in a generous handful of mozzarella cheese.
  6. Transfer the mixture to a greased casserole dish, spreading it evenly, and top with remaining cheese.
  7. Cover with foil and bake for about 30 minutes. Remove foil and bake for another 20 minutes until the potatoes are tender and cheese is golden.
  8. Let rest for 10 minutes before serving.

Notes

For an even creamier texture, consider pre-cooking the potatoes for 5 minutes before mixing. Ensure uniform cutting of potatoes for even cooking.
