Ingredients

  • 1 head romaine or iceberg lettuce, torn into bite-sized pieces
  • 2 cups cherry tomatoes, halved
  • 6 oz salami, sliced
  • 6 oz capicola, sliced
  • 6 oz provolone cheese, diced
  • 1 medium red onion, thinly sliced
  • 1 cup bell peppers, diced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • Fresh basil, parsley, and oregano to taste
  • Salt and pepper to taste

Instructions

  1. Wash and dry the lettuce thoroughly. Tear or chop into bite-sized pieces and place in a large mixing bowl.
  2. Dice the tomatoes, thinly slice the onions, and chop the peppers into bite-sized pieces. Add to the bowl with the greens.
  3. Cut the salami, capicola, and provolone into strips or cubes, and add to the mix.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and chopped herbs until well combined.
  5. Pour the dressing over the salad and toss gently to coat all ingredients evenly. Taste and adjust seasoning if needed.
  6. Allow the salad to chill for about 20 minutes before serving to let the flavors meld.
