Ingredients

- 1 head romaine or iceberg lettuce, torn into bite-sized pieces
- 2 cups cherry tomatoes, halved
- 6 oz salami, sliced
- 6 oz capicola, sliced
- 6 oz provolone cheese, diced
- 1 medium red onion, thinly sliced
- 1 cup bell peppers, diced
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Fresh basil, parsley, and oregano to taste
- Salt and pepper to taste
Instructions
- Wash and dry the lettuce thoroughly. Tear or chop into bite-sized pieces and place in a large mixing bowl.
- Dice the tomatoes, thinly slice the onions, and chop the peppers into bite-sized pieces. Add to the bowl with the greens.
- Cut the salami, capicola, and provolone into strips or cubes, and add to the mix.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and chopped herbs until well combined.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly. Taste and adjust seasoning if needed.
- Allow the salad to chill for about 20 minutes before serving to let the flavors meld.
