  • Zest of 1 Lemon or Orange

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, cream together the ricotta, butter, and sugar until smooth. Add eggs one at a time, mixing well.
  5. Stir in the vanilla and zest.
  6. Fold the dry ingredients into the wet mixture until just combined, then gently mix in the chocolate chips.
  7. Pour into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until golden and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.

Notes

For a lighter version, substitute cottage cheese for ricotta. Pair with whipped cream or gelato for an enhanced experience.
