- 4 boneless, skinless chicken breasts
- 8 oz Brie cheese, softened
- 1 cup cranberry sauce
- 2 cloves garlic, minced
- 1 tbsp fresh thyme or rosemary
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally but not cutting all the way through.
- Mix softened Brie cheese and cranberry sauce in a small bowl.
- Spoon the Brie and cranberry mixture into the center of each butterflied chicken breast.
- Fold the chicken back over and secure with toothpicks or kitchen twine.
- Rub the chicken breasts with olive oil and season generously with salt, pepper, and herbs.
- Heat some olive oil in a skillet over medium-high heat.
- Sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake for about 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before slicing.
Notes
You can add a dash of cinnamon to the filling for extra warmth. Pair with roasted vegetables or a fresh salad.
