- Candied citrus peels (for brightness)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking tray, lining it with parchment paper.
- Combine the dry ingredients: whisk together the flour, baking powder, baking soda, spices, and salt.
- Prepare the fruit and nuts by mixing them with a tablespoon of flour.
- Cream together the butter and light brown sugar until light and fluffy.
- Add the eggs one at a time, incorporating each fully before the next.
- Mix in the milk or buttermilk until combined.
- Fold in the dry ingredients until just combined, then gently fold in the fruits and nuts.
- Pour the batter into the prepared tray and smooth the top.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 15 minutes in the pan before transferring to a wire rack to cool completely, then cut into squares.
