Description

A delightful traybake that captures the essence of traditional fruitcake with a simpler, shareable twist, perfect for the holiday season.

Ingredients

Scale
  • 1 cup mixed dry fruits (raisins, cranberries, chopped dried apricots)
  • 1/2 cup nuts (walnuts or pecans)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon fresh orange zest
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking tray.
  2. Prepare the dried fruits and nuts by chopping them into smaller pieces.
  3. Mix the dry ingredients: whisk together flour, baking powder, spices, and salt in a bowl.
  4. Cream the softened butter with brown and white sugars until light and fluffy.
  5. Add the eggs one at a time, mixing well after each. Then fold in the orange zest.
  6. Combine the dry ingredients gradually with the wet mixture, stirring until just combined.
  7. Fold in the mixed fruits and nuts until evenly distributed.
  8. Bake for about 30-35 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a lighter version, substitute coconut oil for butter and use unsweetened applesauce instead of eggs. Drizzle with a glaze made of powdered sugar and spices for a festive touch.
