- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 1/2 cups all-purpose flour
- 2 large eggs
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking tray.
- Prepare the dried fruits and nuts by chopping them into smaller pieces.
- Mix the dry ingredients: whisk together flour, baking powder, spices, and salt in a bowl.
- Cream the softened butter with brown and white sugars until light and fluffy.
- Add the eggs one at a time, mixing well after each. Then fold in the orange zest.
- Combine the dry ingredients gradually with the wet mixture, stirring until just combined.
- Fold in the mixed fruits and nuts until evenly distributed.
- Bake for about 30-35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a lighter version, substitute coconut oil for butter and use unsweetened applesauce instead of eggs. Drizzle with a glaze made of powdered sugar and spices for a festive touch.
