- 1 lb boneless chicken (breast or thighs), cubed
- 8 oz fresh mushrooms (button or cremini), chopped
- 8 oz cream cheese
- 1 cup chicken broth or low-sodium vegetable broth
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 cups low-carb vegetables (broccoli or spinach)
- 3 cloves garlic, minced
- Fresh herbs (parsley, thyme, Italian seasoning)
- 2 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Sauté mushrooms and garlic until golden and fragrant (5-7 minutes).
- Season cubed chicken with salt, pepper, and herbs. Push mushrooms to one side and add chicken. Cook until chicken is no longer pink (7-10 minutes).
- In a mixing bowl, combine cream cheese, broth, and herbs. Stir until smooth.
- Pour the creamy mixture over the chicken and mushrooms, folding in vegetables.
- Transfer mixture to a greased casserole dish and top with shredded cheese.
- Bake for 25-30 minutes until bubbling and cheese is golden.
- Let cool for a few minutes before serving.
Notes
Substitute rotisserie chicken for quicker prep or use tofu for a vegetarian option. Always taste as you go for personalized seasoning.
