  • 1 cup chopped onions
  • 1 cup diced mushrooms
  • 1 cup diced bell peppers
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp black pepper
  • Salt to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté chopped onions and garlic in a bit of olive oil until they become soft and fragrant, about 2–3 minutes.
  3. Add diced chicken to the skillet, seasoning it with salt, pepper, and garlic powder, then cook until lightly browned.
  4. Stir in diced bell peppers and mushrooms, cooking until they soften.
  5. Remove from heat and let the mixture cool slightly.
  6. Combine cream cheese with chicken broth in a mixing bowl until smooth and creamy.
  7. Fold in the sautéed chicken and veggies, mixing well.
  8. Pour the entire mixture into a greased casserole dish.
  9. Sprinkle shredded cheese on top, and add additional herbs if desired.
  10. Bake in the oven for 25–30 minutes, until cheese is bubbly and golden.
  11. Let cool for a few minutes before serving.
