- 2 lbs boneless chicken (breast or thighs)
- 8 oz cream cheese
- 1 cup chopped onions
- 1 cup diced mushrooms
- 1 cup diced bell peppers
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp black pepper
- Salt to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté chopped onions and garlic in a bit of olive oil until they become soft and fragrant, about 2–3 minutes.
- Add diced chicken to the skillet, seasoning it with salt, pepper, and garlic powder, then cook until lightly browned.
- Stir in diced bell peppers and mushrooms, cooking until they soften.
- Remove from heat and let the mixture cool slightly.
- Combine cream cheese with chicken broth in a mixing bowl until smooth and creamy.
- Fold in the sautéed chicken and veggies, mixing well.
- Pour the entire mixture into a greased casserole dish.
- Sprinkle shredded cheese on top, and add additional herbs if desired.
- Bake in the oven for 25–30 minutes, until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
