Description

Delightfully easy muffins made with cottage cheese and oats, perfect for breakfast or a nutritious snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup old-fashioned oats
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon or nutmeg (optional)
  • Optional mix-ins: chocolate chips, nuts, blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend the cottage cheese, oats, eggs, honey, and spices until smooth, about 30 seconds.
  3. Add the baking powder and baking soda to the mixture and gently fold in any optional mix-ins.
  4. Fill muffin tins about 3/4 full with the batter.
  5. Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  6. Cool in the tin for a few minutes, then transfer to a wire rack.

Notes

Store in an airtight container for up to 3 days, or freeze for up to 3 months. Allow to come to room temperature before enjoying.
