Delightfully easy muffins made with cottage cheese and oats, perfect for breakfast or a nutritious snack.
Ingredients

- 1 cup cottage cheese
- 1 cup old-fashioned oats
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon or nutmeg (optional)
- Optional mix-ins: chocolate chips, nuts, blueberries
Instructions
- Preheat the oven to 350°F (175°C).
- Blend the cottage cheese, oats, eggs, honey, and spices until smooth, about 30 seconds.
- Add the baking powder and baking soda to the mixture and gently fold in any optional mix-ins.
- Fill muffin tins about 3/4 full with the batter.
- Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack.
Notes
Store in an airtight container for up to 3 days, or freeze for up to 3 months. Allow to come to room temperature before enjoying.
