- 1 cup fresh cranberries
- 1 tablespoon orange zest
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil (or melted butter)
- 2 eggs
- 1 cup milk
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin with liners.
- Mix the dry ingredients in a large bowl: flour, sugar, baking powder, and salt.
- Prepare the wet ingredients in another bowl by beating together eggs, milk, and oil. Add orange zest.
- Combine the wet and dry ingredients, stirring gently. Avoid overmixing; a few lumps are fine.
- Fold in the cranberries carefully to distribute them in the batter.
- Scoop the batter into muffin cups, filling them about two-thirds full.
- Bake for 18–20 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before transferring to a wire rack. Enjoy warm!
