- 2 cups fresh spinach
- 3 cups all-purpose flour (or whole wheat for a nuttier flavor)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 egg (for binding and glaze)
- Optional: fresh herbs like dill or chives
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- Sauté the spinach in a skillet with a little oil until wilted, about 2-3 minutes. Set aside to cool.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- Add the cottage cheese and sautéed spinach, mixing gently. If using herbs, add them now.
- Form the bagels by grabbing a handful of dough, shaping it into a ball, and poking a hole through the center.
- Place the bagels onto the baking sheet, brush with beaten egg for gloss, and bake for 20-25 minutes until golden brown.
- Allow cooling slightly before slicing. Enjoy!
