Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Sauté the spinach in a skillet with a little oil until wilted, about 2-3 minutes. Set aside to cool.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  4. Add the cottage cheese and sautéed spinach, mixing gently. If using herbs, add them now.
  5. Form the bagels by grabbing a handful of dough, shaping it into a ball, and poking a hole through the center.
