Ingredients

- 2 cups cooked chicken, diced
- 1 cup Greek yogurt
- 1 cucumber, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 splash of lemon juice
Instructions
- Cook the chicken until it reaches an internal temperature of 165°F, then let it rest and chop into bite-sized pieces.
- Combine Greek yogurt, minced garlic, lemon juice, and chopped herbs in a mixing bowl.
- Fold the chicken into the tzatziki mixture along with diced cucumbers and crumbled feta cheese.
- Taste and adjust seasoning, adding salt or more lemon juice as desired.
- Chill the salad for at least 30 minutes before serving.
- Garnish with more fresh herbs and a drizzle of olive oil before serving.
Notes
Feel free to substitute cherry tomatoes for cucumbers if needed. You can also make this salad vegetarian by using chickpeas instead of chicken.
