Ingredients

  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 splash of lemon juice

Instructions

  1. Cook the chicken until it reaches an internal temperature of 165°F, then let it rest and chop into bite-sized pieces.
  2. Combine Greek yogurt, minced garlic, lemon juice, and chopped herbs in a mixing bowl.
  3. Fold the chicken into the tzatziki mixture along with diced cucumbers and crumbled feta cheese.
  4. Taste and adjust seasoning, adding salt or more lemon juice as desired.
  5. Chill the salad for at least 30 minutes before serving.
  6. Garnish with more fresh herbs and a drizzle of olive oil before serving.

Notes
