- 2 boneless chicken breasts (or thighs)
- 1 cup Greek yogurt
- 1 cucumber, grated or finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh dill (or parsley as substitute)
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 shallot, finely chopped
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper, then grill until cooked through (about 6-7 minutes per side). Let rest, then slice into bite-sized pieces.
- In a mixing bowl, combine Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Mix until smooth and well combined.
- In a large bowl, combine the sliced chicken, tzatziki dressing, finely chopped shallot, and additional cucumbers if desired. Gently fold until all ingredients are coated.
- For best flavor, chill the salad in the refrigerator for at least 30 minutes.
- Serve on a bed of greens, in pita, or alongside warm pita bread.
