- 4 fresh cod fillets
- 1 cup coconut cream
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- A splash of soy sauce or fish sauce (optional)
Instructions
- Prep the ingredients by chopping garlic and shallots finely.
- Heat olive oil in a large skillet over medium heat. Add shallots and sauté until translucent.
- Add minced garlic and sauté for an additional minute.
- Place cod fillets in the skillet, seasoning with salt and pepper. Cook for 4-5 minutes on each side until golden brown.
- Reduce heat and pour in coconut cream and lemon juice, stirring gently. Allow to simmer for a couple of minutes.
- Stir in chopped cilantro and soy sauce or fish sauce if desired.
- Plate the cod and drizzle the sauce over the top, serving with rice or salad.
Notes
For a lighter option, use light coconut milk instead of cream. Feel free to substitute cod with halibut or tilapia.
