Ingredients

  • 4 fresh cod fillets
  • 1 cup coconut cream
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • A splash of soy sauce or fish sauce (optional)

Instructions

  1. Prep the ingredients by chopping garlic and shallots finely.
  2. Heat olive oil in a large skillet over medium heat. Add shallots and sauté until translucent.
  3. Add minced garlic and sauté for an additional minute.
  4. Place cod fillets in the skillet, seasoning with salt and pepper. Cook for 4-5 minutes on each side until golden brown.
  5. Reduce heat and pour in coconut cream and lemon juice, stirring gently. Allow to simmer for a couple of minutes.
  6. Stir in chopped cilantro and soy sauce or fish sauce if desired.
  7. Plate the cod and drizzle the sauce over the top, serving with rice or salad.

Notes

For a lighter option, use light coconut milk instead of cream. Feel free to substitute cod with halibut or tilapia.
