- 1/2 cup unsalted butter, melted

- 16 oz cream cheese, full-fat, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream (or Greek yogurt)
- 1 tsp vanilla extract
- 3 large eggs, room temperature
Instructions
- Preheat the Oven: Preheat your oven to 325°F (160°C).
- Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into lined muffin tins.
- Bake the Crust: Bake the crust for about 10 minutes until set.
- Make the Filling: Beat cream cheese and sugar until smooth. Add sour cream and vanilla, then the eggs one at a time.
- Fill the Cups: Pour the filling over the crust, filling each cup three-quarters full.
- Bake: Bake for 18-20 minutes until slightly jiggly in the center.
- Cool and Chill: Turn off the oven, let the cheesecakes cool inside for an hour, then refrigerate for at least four hours.
- Serve: Add toppings as desired before serving.
