  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup Irish cream liqueur

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix cocoa powder, flour, granulated sugar, baking soda, and salt until well combined.
  3. In a separate bowl, cream the unsalted butter until light and fluffy. Add Irish cream and vanilla extract, then combine with dry ingredients until blended.
  4. Scoop and shape the dough into balls on a parchment-lined baking sheet, leaving space between each cookie.
  5. Bake for 10-12 minutes, or until edges are firm. Let cool on the tray for 5 minutes before transferring to a wire rack.
  6. For the filling, beat together unsalted butter, powdered sugar, Irish cream, and vanilla extract until smooth.
  7. Assemble cookies by spreading filling on one cookie and pressing another on top.
