- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup Irish cream liqueur

- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix cocoa powder, flour, granulated sugar, baking soda, and salt until well combined.
- In a separate bowl, cream the unsalted butter until light and fluffy. Add Irish cream and vanilla extract, then combine with dry ingredients until blended.
- Scoop and shape the dough into balls on a parchment-lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until edges are firm. Let cool on the tray for 5 minutes before transferring to a wire rack.
- For the filling, beat together unsalted butter, powdered sugar, Irish cream, and vanilla extract until smooth.
- Assemble cookies by spreading filling on one cookie and pressing another on top.
