Irish Bacon, Cabbage, and Potato Soup

Description

A comforting and hearty soup featuring Irish bacon, cabbage, and potatoes that brings warmth and nostalgia to your dinner table.


Ingredients

  • 4 slices Irish bacon (or unsmoked bacon)
  • 1 medium head green cabbage, chopped
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon fresh thyme (or dried)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Dice the bacon into small pieces, chop the cabbage, and peel and cube the potatoes. Mince the garlic and onion.
  2. In a large pot over medium heat, add the bacon pieces and cook until crispy. Remove with a slotted spoon, leaving the rendered fat in the pot.
  3. Add the diced onion to the pot and sauté for 4-5 minutes until translucent. Then, add minced garlic and sauté for another minute.
  4. Add the chopped cabbage and potatoes to the pot, and stir to coat with bacon fat. Cook for about 5 minutes.
  5. Pour in chicken or vegetable broth to cover the cabbage and potatoes by an inch. Add the crispy bacon and bring to a simmer.
  6. Season with salt, pepper, and herbs. Simmer on low for 20-25 minutes or until the potatoes are tender.
  7. Taste and adjust seasoning before serving. Serve hot, garnished with fresh parsley and enjoy with crusty bread.

Notes

For a vegetarian option, replace the bacon with smoked paprika and use vegetable broth. Leftovers can be stored in the refrigerator for up to 3-4 days.
