A comforting and hearty soup featuring Irish bacon, cabbage, and potatoes that brings warmth and nostalgia to your dinner table.

- 4 slices Irish bacon (or unsmoked bacon)
- 1 medium head green cabbage, chopped
- 3 medium Yukon Gold potatoes, peeled and cubed
- 2 cloves garlic, minced
- 1 medium yellow onion, diced
- 4 cups chicken broth (or vegetable broth)
- 1 teaspoon fresh thyme (or dried)
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Dice the bacon into small pieces, chop the cabbage, and peel and cube the potatoes. Mince the garlic and onion.
- In a large pot over medium heat, add the bacon pieces and cook until crispy. Remove with a slotted spoon, leaving the rendered fat in the pot.
- Add the diced onion to the pot and sauté for 4-5 minutes until translucent. Then, add minced garlic and sauté for another minute.
- Add the chopped cabbage and potatoes to the pot, and stir to coat with bacon fat. Cook for about 5 minutes.
- Pour in chicken or vegetable broth to cover the cabbage and potatoes by an inch. Add the crispy bacon and bring to a simmer.
- Season with salt, pepper, and herbs. Simmer on low for 20-25 minutes or until the potatoes are tender.
- Taste and adjust seasoning before serving. Serve hot, garnished with fresh parsley and enjoy with crusty bread.
Notes
For a vegetarian option, replace the bacon with smoked paprika and use vegetable broth. Leftovers can be stored in the refrigerator for up to 3-4 days.
