- Lasagna noodles
- 1 cup butternut squash, diced
- 2 cups fresh spinach
- 1 cup cremini mushrooms, sliced
- 1 cup shiitake mushrooms, sliced
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian herbs (basil and oregano)
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the onion and garlic in olive oil until translucent.
- Add the sliced mushrooms and cook until softened.
- Toss in the butternut squash and spinach, seasoning with salt, pepper, and herbs. Cook until spinach wilts.
- Mix the ricotta, half of the mozzarella, Parmesan, and a pinch of salt in a bowl.
- Layer the baking dish starting with vegetables, then noodles, then cheese mixture, repeating until all ingredients are used, finishing with noodles and remaining mozzarella.
- Bake covered with foil for 30 minutes, then uncover and bake for an additional 15 minutes until cheese is golden.
- Cool for 10-15 minutes before slicing and serving.
Notes
Feel free to add ground turkey or lentils for added protein. Letting the lasagna rest after baking helps it hold its shape when slicing.
