Ingredients

  • Lasagna noodles
  • 1 cup butternut squash, diced
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, sliced
  • 1 cup shiitake mushrooms, sliced
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian herbs (basil and oregano)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onion and garlic in olive oil until translucent.
  3. Add the sliced mushrooms and cook until softened.
  4. Toss in the butternut squash and spinach, seasoning with salt, pepper, and herbs. Cook until spinach wilts.
  5. Mix the ricotta, half of the mozzarella, Parmesan, and a pinch of salt in a bowl.
  6. Layer the baking dish starting with vegetables, then noodles, then cheese mixture, repeating until all ingredients are used, finishing with noodles and remaining mozzarella.
  7. Bake covered with foil for 30 minutes, then uncover and bake for an additional 15 minutes until cheese is golden.
  8. Cool for 10-15 minutes before slicing and serving.

Notes

Feel free to add ground turkey or lentils for added protein. Letting the lasagna rest after baking helps it hold its shape when slicing.
