Description

A delightful and easy recipe for a whole chicken cooked in an Instant Pot, resulting in tender meat and flavorful broth.


Ingredients

  • Whole chicken (3-5 lbs)
  • Olive oil or butter
  • Fresh garlic
  • Onions
  • Herbs (such as thyme or rosemary)
  • Chicken or vegetable broth
  • Salt
  • Pepper
  • Your preferred spices
  • Lemon or orange zest

Instructions

  1. Rinse and pat dry the chicken. Rub with olive oil or butter, seasoning generously with salt, pepper, and herbs.
  2. Turn the Instant Pot to Sauté. Sear the chicken breast-side down for 5 minutes until browned. Flip the chicken and add chopped onions and garlic.
  3. Pour in the broth and add herbs. Close the lid, set the valve to sealing, and select Pressure Cook for 6 minutes per pound.
  4. After cooking, allow for a natural pressure release for 10-15 minutes, then release any remaining pressure.
  5. For crispy skin, broil the chicken in the oven for 3-5 minutes.
  6. Let the chicken rest for a few minutes before carving. Serve with the broth as a dipping sauce and choice of sides.

Notes

Ensure generous seasoning for the best flavor. Use a kitchen thermometer to check for an internal temperature of 165°F. Save leftover broth for future use.
