Ingredients
Scale
- 1 lb boneless chicken (breast or thighs)
- 2 cups chicken broth (or vegetable broth)
- 1 cup long-grain white rice (or Arborio)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup heavy cream (or coconut milk)
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 1 tsp dried thyme (or fresh)
- Salt and pepper to taste

- Add chopped chicken pieces to the pot and sear for 3-4 minutes until browned.
- Stir in rice, broth, and any vegetables; season with salt, pepper, and herbs. Mix well.
- Secure the lid and cook at high pressure for 10 minutes. Allow about 10 minutes for the pot to reach full pressure.
- Perform a quick release to vent the steam, remove the lid, and gently stir the mixture.
- Stir in heavy cream (or coconut milk) and adjust seasoning if needed.
- Serve warm, garnished with fresh herbs.
Notes
Browning the chicken adds depth of flavor. Ensure rice is fully submerged in liquid for perfect texture.
