Ingredients

  • 3 cloves garlic, minced
  • 1/2 cup heavy cream (or coconut milk)
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 1 tsp dried thyme (or fresh)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Use the “Sauté” function on your Instant Pot. Add olive oil, then sauté diced onions and minced garlic until fragrant and translucent.
  2. Add chopped chicken pieces to the pot and sear for 3-4 minutes until browned.
  3. Stir in rice, broth, and any vegetables; season with salt, pepper, and herbs. Mix well.
  4. Secure the lid and cook at high pressure for 10 minutes. Allow about 10 minutes for the pot to reach full pressure.
  5. Perform a quick release to vent the steam, remove the lid, and gently stir the mixture.
  6. Stir in heavy cream (or coconut milk) and adjust seasoning if needed.
  7. Serve warm, garnished with fresh herbs.

Notes

Browning the chicken adds depth of flavor. Ensure rice is fully submerged in liquid for perfect texture.
