  • 1 cup full-fat Greek yogurt
  • 2 ripe bananas
  • 2 eggs
  • 1 cup almond flour or oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish, or line it with parchment paper.
  2. Mash the bananas in a mixing bowl until smooth.
  3. Mix the eggs into the banana mixture, followed by the Greek yogurt and vanilla extract. Stir until well combined.
  4. In another bowl, whisk together the cocoa powder, almond flour, baking powder, and salt.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing gently until just combined.
  6. Pour the batter into the prepared baking dish and smooth out the top. Optionally sprinkle chocolate chips on top.
  7. Bake for 20-25 minutes, until a toothpick comes out with a few moist crumbs.
  8. Let cool for 10-15 minutes before slicing.
