Description

A luscious dessert featuring thick, velvety custard infused with coffee and topped with a caramelized sugar crust.


Ingredients

  • 2 cups heavy cream
  • 1 cup strong brewed coffee
  • 4 egg yolks
  • 1/2 cup granulated sugar (plus extra for caramelizing)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and brewed coffee over medium heat until it’s just about to simmer, then remove from heat and let cool slightly.
  3. Whisk together the egg yolks, sugar, and salt in a large bowl until pale and creamy. Gradually pour the warm coffee-cream mixture into the egg mixture, stirring continuously. Add in the vanilla extract.
  4. Strain the mixture through a fine mesh sieve into a pitcher or bowl.
  5. Divide the custard mixture evenly among the ramekins, placing them in a deep baking dish. Pour hot water into the baking dish to come halfway up the sides of the ramekins.
  6. Bake for 30-40 minutes, or until the edges are set but the centers still slightly tremble.
  7. Let cool before refrigerating for at least 4 hours or overnight.
  8. Before serving, sprinkle a thin layer of sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden brown.
  9. Let cool slightly before serving and enjoy!

Notes

Ensure the cream is hot but not boiling for the best texture. Use a water bath for even cooking.
