- 2 cups heavy cream
- 1 cup strong brewed coffee
- 4 egg yolks
- 1/2 cup granulated sugar (plus extra for caramelizing)
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and brewed coffee over medium heat until it’s just about to simmer, then remove from heat and let cool slightly.
- Whisk together the egg yolks, sugar, and salt in a large bowl until pale and creamy. Gradually pour the warm coffee-cream mixture into the egg mixture, stirring continuously. Add in the vanilla extract.
- Strain the mixture through a fine mesh sieve into a pitcher or bowl.
- Divide the custard mixture evenly among the ramekins, placing them in a deep baking dish. Pour hot water into the baking dish to come halfway up the sides of the ramekins.
- Bake for 30-40 minutes, or until the edges are set but the centers still slightly tremble.
- Let cool before refrigerating for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden brown.
- Let cool slightly before serving and enjoy!
Notes
Ensure the cream is hot but not boiling for the best texture. Use a water bath for even cooking.
