Ingredients

- 2 lbs beef chuck roast or brisket, cut into bite-sized pieces
- 2 medium sweet onions, diced
- 3 tbsp sweet or smoked paprika
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 carrots, diced
- 2 bell peppers, diced
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
- Oil for searing
Instructions
- Season the beef with salt and pepper, then sear in a heavy-bottomed pot over medium-high heat until browned.
- Remove the beef and sauté the onions in the same pot until golden brown.
- Add garlic and paprika, cooking until fragrant, about 1 minute.
- Deglaze with tomatoes and broth, scraping up browned bits, then return the beef and add carrots and bell peppers.
- Bring to a simmer, then add thyme and bay leaves. Cover and simmer for 2 hours on low heat.
- Taste and adjust seasonings, then ladle into bowls and garnish with parsley or sour cream.
Notes
For a vegetarian version, consider using hearty vegetables and lentils or jackfruit as substitutes for meat.
