A delightful mix of sweet Honeycrisp apples, creamy feta, and peppery arugula, tossed in a honey-lemon dressing. This salad celebrates flavors and textures, making it a family favorite.


Ingredients

  • 2 Honeycrisp apples, sliced
  • 1 cup feta cheese, crumbled
  • 4 cups arugula or mixed greens
  • ½ cup walnuts or pecans, chopped
  • 3 tablespoons honey
  • Juice of 1 lemon
  • ⅓ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the greens thoroughly. Wash the Honeycrisp apples and slice them into thin wedges, removing seeds.
  2. In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper. Adjust to taste and set aside.
  3. In a large mixing bowl, combine the greens, apple slices, crumbled feta, and nuts. Drizzle the dressing over the top and gently toss until well coated.
  4. Transfer the salad to a serving bowl, garnish with extra apple slices and feta, and serve immediately.
  5. If there are leftovers, store them in an airtight container in the refrigerator for up to a day.

Notes

For added flavor, you can roast the nuts before adding them to the salad. If you have extra veggies, feel free to toss them in! Substitute feta with goat cheese for a different taste.
