  3. In a large bowl, combine the carrots, olive oil, honey, salt, pepper, and thyme, tossing to coat.
  4. Arrange the carrots in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
