- 2 tbsp honey

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the carrots, cutting them into similar sizes for even cooking.
- In a large bowl, combine the carrots, olive oil, honey, salt, pepper, and thyme, tossing to coat.
- Arrange the carrots in a single layer on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and let rest for a few minutes before serving.
- Garnish with additional thyme or lemon zest if desired.

For a vegan-friendly option, substitute honey with maple syrup. Experiment with garlic or different herbs for added flavor.
