Description

A delightful blend of sweet honey and spicy chicken on a bed of fresh greens, perfect for family gatherings and picnics.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast or thighs
  • 1/2 cup honey
  • 1/4 cup hot sauce
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 4 cups fresh greens (romaine, spinach, or mixed)
  • 1 cup seasonal vegetables (cherry tomatoes, avocado, shredded carrots)
  • 1/2 cup nuts or seeds (toasted pecans or sunflower seeds, optional)
  • Fresh herbs (cilantro or parsley, optional)

Instructions

  1. Marinate the chicken by mixing honey, hot sauce, olive oil, and lemon juice in a bowl. Coat the chicken thoroughly and let it sit for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for about 5-7 minutes per side, until golden and cooked through. Let it rest before slicing.
  3. In a large bowl, combine fresh greens and any diced or shredded vegetables.
  4. Slice the chicken and arrange it over the greens.
  5. Drizzle with honey mustard dressing or your preferred vinaigrette, and top with nuts or seeds if using.
  6. Toss gently to combine and serve immediately.

Notes

If you have leftover chicken from a previous meal, feel free to toss that in too for a quick assembly.
