Ingredients

  • 2 Salmon fillets
  • 1/4 cup Raw honey
  • 1/2 cup Unsalted butter
  • 1 cup Jasmine or brown rice
  • 1/2 cup Fresh herbs (parsley or cilantro)
  • 1 cup Mushrooms (shiitake, cremini, or button)
  • 1 Lemon (for juice)
  • Optional veggies (steamed broccoli, snap peas, or bell peppers)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt butter in a saucepan over low heat, then stir in honey and set aside.
  3. Cook rice according to package instructions.
  4. Season salmon with salt, pepper, and lemon juice.
  5. Place salmon on a baking sheet and brush honey-butter mixture over each fillet.
  6. Roast salmon for 12-15 minutes until cooked through.
  7. Sauté mushrooms in a skillet over medium heat for about 5 minutes.
  8. Assemble bowls with rice, topped with salmon, sautéed mushrooms, and herbs. Drizzle with remaining honey-butter sauce and serve hot.

Notes

For a vegan version, replace salmon with tofu and use quinoa. Rinse rice for fluffier grains.
