- 3 lbs chicken (bone-in, skin-on)
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1 teaspoon turmeric
- 2 teaspoons garam masala
- 2 tablespoons minced fresh ginger
- 2 tablespoons minced garlic
- Salt and pepper to taste
Instructions
- Prepare the marinade by combining yogurt, lemon juice, minced garlic, ginger, and all spices in a large bowl; mix until well combined.
- Add the chicken to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 425°F (220°C) or prepare your grill for direct heat.
- For the oven, place the chicken on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- For grilling, cook the marinated chicken over medium-high heat for about 20 minutes, turning occasionally until cooked through.
- Let the chicken rest for a few minutes before serving, then garnish with fresh cilantro, lemon wedges, or sliced onions as desired.
Notes
For best results, marinate the chicken overnight. You can substitute chicken thighs with drumsticks or skinless chicken breast. For vegetarians, tofu or jackfruit can be used.
