Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 2 large eggs (beaten)
  • Vegetable or peanut oil (for frying)

Instructions

  1. Cut the chicken into bite-sized pieces, about the size of a quarter.
  2. Set up a breading station: one bowl for seasoned flour, one for beaten eggs, and one for breadcrumbs if desired.
  3. Dip each chicken piece in the eggs, allowing excess to drip off, then coat in the seasoned flour.
  4. For a double coat, dip again in the egg and then in the flour.
  5. Heat oil in a skillet over medium-high heat until it sizzles when water is added.
  6. Fry the chicken in batches, cooking for 4-5 minutes per side until golden brown.
  7. Remove cooked chicken and place on paper towels to absorb excess oil.
  8. Serve hot with your favorite dipping sauces.

Notes

For gluten-free options, substitute all-purpose flour with almond flour or a gluten-free blend. You can also use milk or buttermilk instead of eggs.
