Instructions
- Prepare the Filling: In a mixing bowl, combine sifted confectioners’ sugar, corn syrup, butter, and peppermint extract until a soft dough forms.
- Shape the Patties: Dust hands with confectioners’ sugar, take small pieces of dough, roll into balls, and flatten to create 1-inch patties. Place on a lined baking sheet.
- Chill the Filling: Refrigerate patties for about 30 minutes to firm them up.
- Melt the Chocolate: In a microwave-safe bowl, melt chocolate chips with Crisco or coconut oil in 20-second bursts, stirring until smooth.
- Dip the Patties: Remove chilled patties, dip each into melted chocolate, and use a fork to lift out, allowing excess chocolate to drip back.
- Set the Chocolate: Return chocolate-coated patties to the lined baking sheet and let set for about 1 hour or refrigerate to speed up the process.
