Delightful homemade peppermint patties with a smooth minty center coated in rich chocolate.
Ingredients

- 2 cups powdered sugar
- 1 tablespoon sweetened condensed milk
- 1 teaspoon peppermint extract
- 8 ounces semi-sweet or dark chocolate
- 1 tablespoon coconut oil or shortening
Instructions
- In a mixing bowl, combine powdered sugar, sweetened condensed milk, and peppermint extract. Mix until smooth.
- Roll the dough into small balls and flatten into discs, about 1/4 inch thick, placing them on a parchment-lined baking sheet.
- Chill the discs in the refrigerator for about 30 minutes.
- Melt chocolate with coconut oil using a microwave or double boiler.
- Dip each chilled patty into the melted chocolate and let the excess drip off, placing them back on the parchment.
- Allow the chocolate to cool and harden, or refrigerate for about 10 minutes to speed up the process.
- Serve at room temperature and store leftovers in an airtight container.
Notes
Avoid using too much peppermint extract; a little goes a long way. Work quickly when dipping in chocolate.
