Description

Delightful homemade peppermint patties with a smooth minty center coated in rich chocolate.


Ingredients

  • 2 cups powdered sugar
  • 1 tablespoon sweetened condensed milk
  • 1 teaspoon peppermint extract
  • 8 ounces semi-sweet or dark chocolate
  • 1 tablespoon coconut oil or shortening

Instructions

  1. In a mixing bowl, combine powdered sugar, sweetened condensed milk, and peppermint extract. Mix until smooth.
  2. Roll the dough into small balls and flatten into discs, about 1/4 inch thick, placing them on a parchment-lined baking sheet.
  3. Chill the discs in the refrigerator for about 30 minutes.
  4. Melt chocolate with coconut oil using a microwave or double boiler.
  5. Dip each chilled patty into the melted chocolate and let the excess drip off, placing them back on the parchment.
  6. Allow the chocolate to cool and harden, or refrigerate for about 10 minutes to speed up the process.
  7. Serve at room temperature and store leftovers in an airtight container.

Notes

Avoid using too much peppermint extract; a little goes a long way. Work quickly when dipping in chocolate.
